This cookie dough was made in advance and freezed as you need at least a day to relax the gluten. However, after baking the Kueh Lapis on the eve Eve of CNY, & after spending 6 hrs instead of others only spending 3hrs, it was Midnight Eve of CNY. I paused. Very tired.
And so, the dough remained freezed for the next three days…. I got “burnt out” from the constant baking, washing, packaging rush routine.
Anyway, long story short, it’s still in the freezer…. This is the first time I am making them after attending the baking class last year. This recipe is from Mayumi from The Providore.
Plan to bake the cookies this week ~ cookies are freezable for at least a month.
